This is one of my all time f a v o u r i t e recipes and it's just perfect for a light(ish) meal at the end of the day! Grilled aubergines, fresh tomato sauce and then top it off with a thin slice of fetaaa and your life just got 10x bettaaaaa šŸ˜ You're welcome šŸ’•

Before you ask, here's the recipe:

What you need:

  • one aubergine

  • three large tomatoes

  • three anchovies

  • handful of capers

  • one small shallot

  • one small piece of garlic

  • fifty grams of feta (can use mozzarella as a substitute)

  • salad leaves (I like baby spinach and rocket)

  • five basil leaves

  • olive oil

  • salt & pepper

  • balsamic (sweet gives a nice contrast)

  • oregano

What to do:

1. Slice the aubergine in rings and then lightly drizzle in olive oil, salt & pepper. Lay them flat on a tray and put in the oven at 200 deg. C (390 deg. F) for about 10 minutes, then turn them over, grill for another 10 minutes.

2. Cut up the shallot & garlic into small pieces and heat up some olive oil in a pan, goldening the shallot first and then adding the garlic. Slice the tomatoes into small cubes and add to heat, slowly let it simmer. Add the cut up anchovies, capers, and basil leaves to the pan and let cook on medium heat. Salt & pepper, oregano & basil to taste. After about 10 minutes take it off the stove and let it cool.

3. Gently slice the feta into pieces of about 5 x 5 cm

4. Take the aubergines out of the oven and place 3 on a bed of salad (or as many towers you want to have). Drizzle with some tomato sauce and add a slice of feta. Repeat the process until you have a nice tower, I usually do about 2-3 layers :)

5. Sprinkle with some balsamic and fresh basil leaves if you have - enjoy!
